thursday i ditched school again. i think i have a problem. i can't seem to make myself go to school. and it is interesting that at this moment, i have some of the best grades of my college career. all i gotta say is its about friggin time!
so thursday instead of being at school, i came home and vegged out. i decided that linc and i eat out way too much and that if i make a meal plan maybe that will keep us from doing that. thought maybe we could save a little money as well. i went through my cookbook, which i have to say is great, its a better homes & gardens one, a newer addition but just like my mom's. her's is falling apart but has some great, classic recipes.
i came up with a list of things i needed for the recipes, then i made a huge shopping list with all that stuff plus other necessities, and i even put it in order of aisles, how sad is that. i have issues like that i guess.
after work yesterday, i went to the bank, then headed to the store. i was in the produce section looking for the different peppers, picked the ones i needed then went back to my cart. how sad is the world when someone steals your grocery list! that is the only conclusion i can come up. i had put the list in the baby seat, took my purse and walked about 4-5 ft away while getting the peppers. unless in the 2 minutes i was over there some wind blew it out of my cart and someone swept it up, i think it was stolen. i looked all over that stupid produce section and no luck. so i had to try to remember everything i needed. i must be good because i managed to do it with only one mistake, i needed a 14.5 oz can of diced tomatoes, undrained. and i got a 14.5 oz can of whole tomatoes, undrained. not bad. thank you thank you...
then i went to check out. i had a huge cart full of stuff. normally linc and i go shopping together. it is an entirely different experience w/o him. in my stuff i had a bottle of wine and a 6 pack of mike's hard limeade. the cashier just rings it all up w/o asking for my id. i rarely get carded which sucks, makes me feel old. but i hand her my id anyway. she studies it for a second then looks at me relieved. she says"i wasn't sure if you were old enough, i hoped you were, plus you have enough groceries for a family." the age part made me feel a little better, but do i look like a mom? hmmm... don't think i was sporting the mom pants...
it takes me 4 trips to get all the groceries from my car up to my apartment 19 steps up. yes i have a disorder where i have to count the stairs as i walk up, don't know why, and don't know why i don't feel compelled to do it as i walk down, probably because i am more concerned with not tripping and breaking my neck.
here's a rundown of the menu: chile rellenos casserole, beef & chipolte burritos w/pico, fajitas w/guacomole, baked chicken breast w/brown rice & steamed vegetables, pesto pasta, tacos w/spanish rice, lasagna, pot roast w/cornbread, and roast chicken & biscuits.
i find that cooking has become my stress release. it is nice to take some time away from the books, put on some good music that i sing along to or that has a good beat. then just focus on the food for the next half hour. i don't really make anything that takes a real long time to prepare. i think lasagna and manicotti take the longest, but i've only made manicotti once and had no clue how to get the cheese in the middle of the noodles, that took forever. lasagna, well i have a system now, it's one of linc's favorites so i make it often. plus it makes like 8-10 servings so we can have leftovers for the week.
all this cooking is definitely starting to show in my waistline plus i have very little time to work out. i guess i could work out instead of blog, ha, yeah right. i lack motiviation. i still fit into my favorite jeans, then again they are a size bigger than my last pair of favorite jeans that i wore so much that i wore out the butt in them.
anyway, i really do need to get started on studying. i have a tax midterm on monday. i'm not too worried about it because i worked in tax for like 3.5 years at my last job so it is a little easier than my other accounting test. i'll get those results monday... i think i will cry.
peace
