last weekend i decided that since i am so busy during the week i would make a bunch of big dinners so lincoln could just reheat them throughout the week. i got a really cool crockpot from brian & judy so i have been making all kinds of crazy things with it. throw in some stuff in the morning before work and it's done when linc gets home. its fabulous, love it. anyway, so last weekend while making all kinds of stuff (i'll list it all later) i decided to try and make some pico like my dad's, his is the best. another wedding gift we got was this new set of knives. these things are crazy sharp. so i am chopping away - tomatoes, onions, garlic, jalapenos, and stuff with this super huge chef's knife. and everything goes fine. i mean i did shed a few tears from all the onions and stuff but didn't lose any digits. so after that was all said and done, i realized i needed some more onion for the enchiladas i was making for dinner. i picked up the onion and as i brought the knife down to slice it, the onion slipped out of my hand and i practically sliced off my middle finger. i yelped for a second, then paused to survey the damage. it's one thing that the knife was sharp, but the real pain was from the fact that i had yet to wipe the knife's blade after the pico so it was covered in all the ingredients above. it burned like i was just rubbing hot peppers all over my wound. and boy did the sucker bleed! it hasn't quite healed over and it is going to leave a nasty scar, i'm sure. plus the top part of my finger is partially numb, i wonder if that is permanent. i guess i don't really need feeling in that part of my finger, especially if i keep having these accidents.
so my list of all the stuff i made in 2 days: pico, green chile chicken enchiladas, slow-cooked chicken & rice, beef stew, cornbread (from scratch), chocolate cookies (also from scratch), and lemon bars (yes, from scratch as well, my nana gave me her recipe). i think i spent all weekend in the kitchen either cooking or washing dishes. oh well, it was actually kinda fun. gotta earn my keep, right linc?
